Freeze-dried raw food was minimally studied compared to the fresh or frozen varieties, though multiple health safety studies have demonstrated the process of freeze drying is not effective for elimination of pathogens. Pathogenic bacteria have been isolated from freeze-dried raw meat based diets. While the bacterial quantity is reduced compared to fresh or frozen raw, these quantities appear sufficient enough to result in disease transmission to dogs and/or humans.

There is a significant risk of illness for dogs and people alike with raw meat based diets, and freeze-drying does not appear to eliminate this risk. There was insufficient evidence to establish a benefit of these diets.

Of note, High pressure pasteurization (HPP) has been demonstrated in the laboratory setting to reduce bacterial content (though not eliminate). Raw food treated with HPP may still pose a risk of disease transmission.

Freeze-dried dog food has surged in popularity, marketed as a convenient way to feed "raw" without the freezer storage and mess. The packaging language is reassuring: gently processed, nutrient-preserving, natural. But the science tells a more complicated story than the marketing, and one specific scientific misunderstanding sits at the center of it. This article explains what freeze-dried raw dog food actually is, what freeze-drying does and does not do to harmful bacteria, and what the peer-reviewed evidence says, so you can weigh this feeding choice with accurate information.

What Is Freeze-Dried Raw Dog Food, Exactly?

Freeze-dried dog food is made by removing moisture from raw frozen food using vacuum pressure. It consists of raw meat, organs, bone, and sometimes vegetables that have been frozen and then dehydrated through a process called sublimation, in which ice transitions directly to vapor without becoming liquid. This removes the large majority of the food's moisture while keeping the ingredients essentially uncooked.

Because the process happens at low temperature, it preserves the original nutrients and structure of the food well, which is why brands market these products as superior (Alp & Bulantekin, 2021). But here is the critical point that marketing rarely makes clear: preserving nutrients also means preserving whatever bacteria were present in the raw ingredients. Freeze-drying is a preservation method, not a sterilization method.

Does Freeze-Drying Kill Harmful Bacteria? The Most Important Question

This is the single most misunderstood aspect of freeze-dried raw food, and understanding it is essential to evaluating any product on the shelf.

Freeze-drying is not a "kill step." In food safety science, a kill step is a process, such as cooking to a sufficient internal temperature, that reliably reduces dangerous pathogens to safe levels. Freeze-drying removes water to make a product shelf-stable, but it does not reliably eliminate bacteria, viruses, or parasites. Dried foods, including freeze-dried products, are commonly and mistakenly assumed to be inherently safe, yet the food science literature documents numerous foodborne illness outbreaks traced to dried foods (Chitrakar et al., 2019).

There is an additional, counterintuitive detail worth understanding. During the later stages of freeze-drying, the product becomes so dry and porous that it does not conduct heat well. This means that even if a manufacturer raises temperatures during the process, the product may be too dry for that heat to penetrate and inactivate bacteria. As a result, a pathogen such as Salmonella present in the raw starting material can become more heat-resistant and be preserved through drying rather than destroyed. This is precisely why many freeze-dried raw products are treated with high-pressure processing (HPP) before drying, and why the word "freeze-dried" on a label tells you nothing reliable about whether a product has undergone any genuine pathogen-control step.

The research bears this out. Pathogens can remain dormant at the low moisture levels of a freeze-dried product, then multiply rapidly once the food is rehydrated in your dog's bowl or digestive tract. Studies of commercial raw pet foods have confirmed that bacteria survive both freezing and drying, underscoring that contamination can persist throughout manufacturing (Kananub et al., 2020). Surveys in Europe and North America have found Salmonella in a meaningful proportion of commercial raw diets, with many samples exceeding hygiene thresholds for Enterobacteriaceae (Davies, 2019).

How "Kill Steps" Differ Across Pet Food Formats

It helps to understand where freeze-drying sits relative to other production methods, because the differences are often blurred by marketing language like "gently cooked," "air-dried," and "minimally processed."

  • Cooking and extrusion (conventional kibble and canned food) use high temperatures that reliably reduce pathogens. This is a genuine kill step.
  • Air-drying, when done properly, typically begins with a cooking or baking step that serves as the kill step, followed by low-temperature drying. The cooking stage, not the drying, is what reduces pathogens.
  • Freeze-drying involves no inherent kill step. It is a dehydration and preservation process applied to raw material.
  • Freezing, used for frozen raw products, is also not a kill step. Salmonella and other pathogens can survive long-term frozen storage.
  • High-pressure processing (HPP) is a non-thermal method that can substantially reduce pathogens such as Salmonella while keeping the product raw in appearance (Serra-Castelló et al., 2023). It reduces risk but does not guarantee sterility, does not protect against recontamination after the package is opened, and is not used by all manufacturers.

The practical implication for owners is that you usually cannot tell from the packaging whether a freeze-dried product underwent any pathogen-reduction step at all. If you are evaluating a product, contacting the manufacturer directly to ask whether the food undergoes HPP or another validated pathogen-control process, and what microbial testing it performs, is one of the few ways to get a clear answer.

What the Evidence Shows: Raw and Freeze-Dried vs. Cooked

Multiple independent studies have compared the microbiological quality of raw and freeze-dried diets against cooked or extruded options, and the findings are consistent.

  • Solís et al., 2022 — Chile, food and fecal samples. Over one-third (35.7%) of raw meat-based diets contained Salmonella or Listeria, while zero extruded kibble samples tested positive for any pathogen. About 33% of dogs eating raw diets shed Salmonella, Campylobacter, or Listeria in their feces, and genetic analysis confirmed identical Salmonella strains in the food and in the dog feces from the same household — direct evidence of transmission from food to dog to home environment.
  • Davies, 2019 — review. Raw pet foods commonly exceed hygiene thresholds and carry antibiotic-resistant organisms, unlike most conventional commercial foods. The review also found neither robust evidence nor a plausible mechanism for many of the widely claimed benefits of raw feeding.
  • Kananub et al., 2020 — Thailand. Confirmed surviving bacteria after both freezing and drying, highlighting contamination risk during manufacturing and handling.

From a public health perspective, standard commercial cooked dog food is consistently the lower-risk choice for bacterial contamination.

Freeze-Dried Raw and Long-Term Health: What Do We Actually Know?

Marketing claims promise shinier coats, firmer stools, allergy relief, and longer life. These claims remain largely unproven.

A 2024 study comparing frozen raw, freeze-dried raw, fresh, and extruded diets found meaningful differences in digestibility, fecal characteristics, and gut microbiota between diet types (Geary et al., 2024). However, it did not assess long-term clinical outcomes such as disease rates or lifespan, and the authors noted that more research is needed to separate the effects of ingredient source, processing method, and nutrient composition. Changes in the microbiome alone do not prove a health advantage.

No large, long-term clinical trials demonstrate that freeze-dried raw diets extend lifespan, reduce cancer, or prevent chronic disease compared to well-formulated commercial foods. Based on the current evidence, freeze-dried raw is best understood as an alternative format with a different risk profile and a higher cost, rather than a proven health upgrade.

Common Myths About Freeze-Dried Raw Dog Food

  • Myth: Freeze-drying sterilizes the food. Pathogens survive drying and remain infectious; rehydration can allow them to multiply (Chitrakar et al., 2019; Kananub et al., 2020).
  • Myth: Dogs can't get sick from Salmonella. Dogs can become ill, and even asymptomatic dogs shed bacteria that can infect people (Davies, 2019; Solís et al., 2022).
  • Myth: "Human-grade" means safe. Human-grade refers to sourcing and handling standards, not pathogen-free status. Raw chicken carries Salmonella regardless of its grade.
  • Myth: Natural equals safer. Raw meat naturally carries microorganisms. Cooking is what reliably reduces them.
  • Myth: No recall means no risk. Contamination can occur without detection, and the absence of a recall does not mean the absence of pathogens.

Who Is Most Vulnerable? Household and Zoonotic Risk

Zoonotic diseases pass from animals or their food to humans, typically via feces, saliva, or contaminated surfaces. Dogs fed raw or freeze-dried raw diets are more likely to shed Salmonella and other pathogens than dogs eating extruded diets, and raw foods can introduce antimicrobial-resistant bacteria into the home (Solís et al., 2022; Davies, 2019).

Higher-risk groups include:

  • Children under 5 (hand-to-mouth behavior and floor contact)
  • Adults over 65
  • Pregnant individuals (Listeria carries a risk of fetal loss)
  • People undergoing chemotherapy, taking immunosuppressive medication, or with immune-compromising conditions

A realistic example is a toddler playing on a floor a dog has walked across after toileting, or a family member handling freeze-dried pieces and then preparing a meal without washing their hands. For households that include vulnerable members, many veterinary and public health organizations recommend avoiding raw and freeze-dried raw diets entirely.

How Freeze-Dried Raw Compares to Conventional Commercial Food

Both formats can meet essential nutrient requirements when properly formulated, but they differ meaningfully in safety, regulation, and practicality.

  • Microbiological safety: Conventional extruded and canned foods are cooked at high temperatures that dramatically reduce pathogens; raw and freeze-dried raw diets typically are not (Solís et al., 2022).
  • Regulation and testing: Large established manufacturers generally follow strict quality control programs, while raw and freeze-dried manufacturers vary widely in their testing and processing.
  • Nutritional completeness: Look for an AAFCO nutritional adequacy statement; the risk of nutritional imbalance increases with improperly formulated raw diets (Davies, 2019).
  • Cost and convenience: Freeze-dried food typically costs several times more per calorie than kibble and requires careful handling, while conventional diets are more economical and simpler to store.

For most dogs and most households, a well-formulated conventional commercial diet remains the lower-risk default.

If You Still Choose Freeze-Dried Raw: Reducing Preventable Harm

Some owners will prefer freeze-dried raw despite the risks, and this article does not tell you what to feed your individual dog — that decision belongs to you and your veterinarian. If freeze-dried raw is something you are considering, the evidence supports discussing these harm-reduction practices with your veterinary team:

  • Wash hands thoroughly with soap and warm water after handling the product or feeding bowls.
  • Prevent children from handling freeze-dried raw food, treats, or used bowls.
  • Store products in sealed containers, away from human food.
