Air-dried diets were poorly studied in the veterinary literature and no clinical comparisons between air-dried vs. commercial extruded kibble were available for comparison. A single clinical trial evaluated the presence of inflammatory by-products in urine and found minimal difference.
Regarding safety, these diets were also poorly studied compared to the freeze dried raw and raw counterparts, though general food safety studies have demonstrated that air-drying alone is insufficient to eliminate pathogens compared to traditional bacterial elimination methods. This suggests that air-dried diets alone (without additional bacterial elimination techniques) may still pose an increased risk of bacterial transmission compared to extruded kibble, though data is extrapolative.

Air-Dried Dog Food: Evidence, Safety, and How It Compares to Kibble and Raw
Air-dried dog food has become increasingly popular among owners looking for an alternative to traditional kibble. Brands market these products as nutrient-dense, minimally processed, and rich in natural nutrition. But what does the research actually show, and what does the word "air-dried" really tell you about a product's safety? What Is Air-Dried Dog Food?
Air-dried dog food is produced by slowly removing moisture from ingredients using warm air at relatively low temperatures, typically around 145°F (63°C). The process usually takes 6 to 12 hours and creates a shelf-stable product with a jerky-like texture, preserving the appearance of fresh meat while eliminating the need for refrigeration.
Understanding how air-drying differs from other processing methods is the foundation for evaluating it accurately:
- Air-dried: uses low-temperature airflow over an extended period, producing a soft, jerky-like, shelf-stable product (Jobe & Downs, 2025).
- Extruded kibble: uses high heat, steam, and pressure to rapidly cook and form hard, uniform pieces. This is the most common method for commercial diets.
- Raw frozen: undergoes no heat treatment and must be stored frozen. A critical distinction is the absence of a "kill step" to reduce potential pathogens (Morgan et al., 2024).
- Dehydrated: uses higher drying temperatures than air-drying and usually requires rehydration before serving.
Many air-dried products are marketed as preserving natural enzymes, vitamins, and minerals better than cooked alternatives. However, processing method alone does not guarantee health benefits. Formulation quality and ingredient sourcing matter more than the label term describing how a food was dried.
Is "Air-Dried" a Kill Step? The Key Safety Question
This is the most important and most commonly misunderstood point about air-dried food, and it requires a careful answer because the term "air-dried" covers a range of very different processes.
In food safety science, a kill step is a process that reliably reduces dangerous pathogens to safe levels. Whether air-drying qualifies depends entirely on how it is done. Some air-dried products begin with a genuine cooking or baking step that serves as the kill step, followed by low-temperature drying to achieve the jerky-like texture and shelf stability. In those products, the initial cooking, not the drying itself, is what reduces pathogens. Other products labeled "air-dried" rely on low-temperature airflow alone, without a validated cooking or pathogen-reduction step.
This distinction matters enormously, and it is invisible on most packaging. A review of drying methods and microbial safety found that conventional air-drying at around 60°C reduces microbes but is not, by itself, reliably sufficient to inactivate all pathogens (Alp & Bulantekin, 2021). The same review found that safety improves significantly when air-drying is combined with additional measures such as ascorbic acid or sodium metabisulfite pre-treatment, UV irradiation, supercritical carbon dioxide, low-pressure superheated steam, or infrared drying.
The practical problem for owners is that the words "air-dried" on a label do not tell you whether any of these additional safety steps, or an initial cooking step, were used. Without a validated kill step, an air-dried diet may still carry a meaningful risk of bacterial contamination. This is why the single most useful thing you can do when evaluating a specific product is to contact the manufacturer and ask directly whether the food includes a validated time-and-temperature cooking step or other pathogen-control technology.
Where Air-Dried Sits on the Pet Food Safety Spectrum
It helps to place air-drying within the broader landscape of pet food processing, because marketing language like "gently cooked," "minimally processed," and "air-dried" tends to blur meaningful differences. From lowest to highest microbiological risk, the general hierarchy supported by the evidence is:
- Properly manufactured kibble and canned diets, which use the highest-heat processing and a clear kill step
- Air-dried diets that include a validated cooking step or additional pathogen-control technology
- Air-dried diets relying on low-temperature airflow alone, without additional intervention
- Raw frozen or fresh diets, which have no kill step
The key insight is that air-drying is not a single category with a single risk level. A well-made air-dried product with a genuine kill step can sit much closer to kibble in safety, while an air-dried product without one sits much closer to raw. The label alone does not tell you which you are buying.
What Does the Science Say About Air-Dried Dog Food?
Very few peer-reviewed studies directly examine air-dried diets in dogs, and none demonstrate clear health advantages over other complete diets.
The most directly relevant study compared four diet types in healthy adult dogs — minimally processed/mildly cooked, air-dried, ultra-processed dry kibble, and ultra-processed canned wet food (Bridglalsingh et al., 2024). Its key findings:
- No significant differences in total urine advanced glycation end products (AGEs) or serum soluble receptor for AGEs (sRAGE) between diets
- Plasma AGE levels did differ by processing method, including between air-dried and ultra-processed dry food
- The AGE-to-sRAGE ratio differed between minimally processed food and canned food, and between air-dried food and dry kibble
What this means for owners is important and easy to overstate. The study shows that air-drying changes certain biochemical markers, but it did not measure long-term health outcomes such as arthritis, kidney disease, cancer, or lifespan. A difference in a biochemical marker is not the same as a difference in health. We cannot conclude that air-dried foods are healthier on the basis of this study.
As of 2026, no controlled clinical trials show that air-dried diets improve longevity, reduce disease risk, or outperform a well-formulated extruded kibble in the average pet dog. A broader 2025 review similarly found that blanket claims equating "processing" with harm are not supported by evidence, and that processing effects vary substantially by ingredient and method (Jobe & Downs, 2025).
How Does Air-Dried Compare to Extruded Kibble?
Traditional kibble remains the most common dog food format, making it the practical comparison for most households. Both extruded and air-dried diets can be formulated to meet AAFCO nutrient profiles for complete and balanced nutrition. While lower-temperature processing may preserve some heat-sensitive nutrients, overall diet formulation matters more than processing method alone.
In the Bridglalsingh study, both extruded and air-dried diets produced measurable AGEs but with different plasma patterns. We do not yet know whether these differences translate into better or worse health outcomes.
In practical terms, air-dried diets are generally more calorie-dense per cup than kibble, maintain a soft jerky-like texture rather than a hard crunchy one, often feature higher overall meat content, cost more per calorie, and have a shorter optimal-freshness window once opened. Based on current evidence, air-dried food is best viewed as another complete-diet option rather than a proven upgrade over high-quality kibble.
What Digestibility Studies Tell Us, and Their Limits
A frequently referenced trial compared extruded kibble, lightly cooked, and raw diets in adult dogs (Algya et al., 2018). It found that lightly cooked and raw diets were highly palatable and digestible, that fecal quality was acceptable across all diets, and that dogs fed raw had higher fecal ammonia and reduced microbial species richness compared to kibble-fed dogs. Lightly cooked and raw diets also reduced blood triglycerides compared with kibble.
This study is relevant context, but it carries an important caveat for air-dried food specifically: it did not test an air-dried diet. Marketing often groups air-dried products with "minimally processed" diets and borrows favorable findings like these, but we cannot assume air-dried diets share the same digestibility or microbiota effects. And as with the AGE findings, changes in microbiota, ammonia, or triglycerides are markers, not proven benefits or harms. They require long-term outcome data that does not yet exist.
Key Risks and Practical Drawbacks of Air-Dried Dog Food
Air-dried diets can work for some dogs, but several considerations warrant attention:
- Microbial risk: low-temperature air-drying alone at around 60°C is not consistently sufficient to inactivate all pathogens (Alp & Bulantekin, 2021). Brands that publish clear time-and-temperature steps or describe additional safety technologies provide more reassurance than those that do not.
- Calorie density and overfeeding: with minimal moisture and high animal-protein content, these foods are calorie-dense, and using typical kibble portion sizes can lead to weight gain.
- Formulation concerns: some products are sold as treats or toppers rather than complete and balanced meals. Feeding these as a primary diet can lead to nutritional imbalance over time. Always check for an AAFCO complete-and-balanced statement for the appropriate life stage.
- Life stage and medical conditions: puppies, certain breeds, and dogs with kidney, liver, or heart disease may require specifically formulated diets. Air-dried products rarely function as therapeutic diets.
- Cost and storage: air-dried food is typically more expensive per calorie than kibble, and opened bags require cool, dry storage and use within the recommended window.
How to Choose and Use an Air-Dried Diet Thoughtfully
For owners who decide to consider an air-dried diet, this article does not tell you what to feed your individual dog — that decision belongs to you and your veterinarian. The evidence does, however, support a few principles worth discussing with your veterinary team.
On labeling, look for products labeled complete and balanced for the correct life stage, verify the caloric content so you can portion accurately, and keep any product sold as a topper or treat below roughly 10% of total daily calories. On company transparency, the more reassuring brands tend to publish nutrient analyses beyond minimum guarantees, describe their specific drying process and any validated microbial safety steps, and employ or consult board-certified veterinary nutritionists.
Discussing air-dried options with your veterinarian is especially worthwhile for puppies, senior dogs, and dogs with chronic illness. If you do transition, doing so gradually over 7 to 10 days while monitoring stool quality, appetite, weight, and energy allows problems to be caught early, and any vomiting, diarrhea, or weight change is worth raising with your veterinarian promptly. Finally, households that include immunocompromised members, infants, or elderly residents should weigh contamination risk carefully and may be better served by fully cooked options.
The Bottom Line
Based on current evidence, air-dried dog food may be a reasonable option for some healthy adult dogs, but there is a potential for increased risk of pathogen transmission relative to fully cooked diets, and no strong clinical data show it to be superior to well-made kibble or other complete diets. Crucially, "air-dried" is not a single thing: whether a product includes a genuine kill step makes a substantial difference to its safety, and that information is rarely visible on the label. Safety, formulation quality, and your individual dog's needs, rather than marketing claims about processing, should guide the choice. When in doubt, consult your veterinarian before making significant changes to your dog's nutrition.
